Dubai has been enjoying an extended ‘good weather’ lately. Its been cloudy and wet and windy and everyone seems to be in good spirits.
One such afternoon last week i visited an old friend, Jane Chou. Our meeting was long due and Jane is now about to pop a baby and all ready to fly to China, her country, to be with her family for the same. I was going to miss her and decided to spend an afternoon with her at her bright little apartment. In true Chinese hospitality, Jane welcomed me into her home and despite of being all big and swollen with pregnancy, insisted she cook for me! I was overwhelmed!
In the days of getting grub delivered at your doorstep in a matter of minutes, how many people actually spend time cooking together with their friends, and enjoy scraping the pans together in the end! Jane, being special, did just that. And refused to bow down when i looked alarmed at the extensive menu she had on her mind!
While we gossiped, talked, discussed domesticity and life in general, she whipped up platters of Stir Fried Chinese Greens, Beef and Cauliflower in Chilli, a hearty Sweet Potato Soup and the most unique and delicious Cola chicken wings.
Cola Chicken wings
Cooking time : 40 mins
8 Chicken wings, cleaned
Dark Soy sauce
a big knob of Fresh Ginger, cut into slices
3 Spring onions, chopped
A half ltr. bottle OR, 1 can of Coca Cola
1 cube of OXO chicken stock OR, a spoonful of Chinese seasoning powder (available at asian supermarkets)
Oil 1 tbsp. Any will do but toasted Sesame oil is the best bet when it comes to Chinese cooking
Half spoon of Corn flour
Jane used NO SALT as the seasoning as well as the soy sauce contain enough salt in them.
1.Place chicken wings in a deep plate or bowl
2.In a separate bowl , mix together, Soy sauce, spring onions, ginger and seasoning.
You could add pepper or freshly chopped green chillies if you like spice. Mix this together and leave to rest for 5 minutes.
3.Pour this marinade on the chicken wings and give each piece of meat a good rub. Leave to rest for 10 minutes, turning the wings and making sure every area is well soaked in marinade.
4. Heat oil in a wok or deep bottomed pan.
5. One by one transfer the chicken wings ( not the marinade) into the pan and arrange so that each receives uniform heat.
6. Drizzle 2-3 tbsp of the marinade onto the wings
7. Cook for a few minutes until the chicken begins changing color and looks half cooked.
8. At this stage, pour a can of Cola onto the chicken. Saute well.
9.Cover and let simmer until the chicken is completely cooked.
10. When the cola has reduced a bit, add the corn flour and simmer until the sauce looks rich and thick.
Make sure the cornflour leaves no lumps in the sauce. For this, mix the cornflour in warm water before u add to the pan.
11. Garnish with coriander or chopped celery
This unique dish tastes great with steamed white rice.
The sweetness of the cola and spicy/ soury marinade impart a flavor like no other. One of the easiest, sweet and spicy chicken dishes i have eaten in recent times.
